Obviously you can vary the ingredients below. This is my typical starting point. In addition to adjusting the quantities for the amount needed I also adjust the amount of cilantro and peppers depending on the occasion. This is consumed so fast in our house that we normally make this with 4 times the ingredients.
2 Cans - Diced Tomatoes
1 Can - Tomato Sauce
1 Bunch - Cilantro Quantities to suite amount needed
2 Bunches - Green Onions
1 Clove - Garlic
1 Jalapeno Pepper
Drain diced tomatoes, mix with tomato sauce.
Finely chop remaining ingredients and add to tomatoes. Salt & Pepper to taste.
Refrigerate for a minimum of 1 hour before serving. Best after 3 hours. This is good for two to three days and must be refrigerated when not being served.
